Ice Box Cookies

2 c. brown sugar
3 eggs
1/2 tbsp. vanilla
1/2 c. shortening
1/2 tbsp. baking soda
1/2 tbsp. cream of tartar
Beat all above ingredients together until light and fluffy. Then add by hand with a large
spoon: 3 1/2 c. flour. Separate in half and make into two rolls. Wrap in wax paper and
refrigerate overnight. Slice into about ½ inch slices and bake in 350 degree oven for
about 10 minutes. Do not bake too long or they will get hard. Remove from the pan
while they are still hot or they will break.
